Dry. Grapefruit, lemon, granny smith, and a touch of orange peels. Skin contact for 20 hours. The juice quickly seperates from the skins. Unfiltered. Unfined. Fermented in wood tanks for 4 weeks at 55oF. on elevage: 6 months on lees in stainless steel.
